Just in time for your Thanksgiving festivities I have for you an amazingly simple and delicious recipe for pumpkin muffins that are also quite versatile. You can make them plain, with nuts, or with chocolate chips (as pictured above) or whatever else your heart desires (dried cranberries, anyone?)!
Ingredients
1-15oz can pumpkin puree (NOT pumpkin pie filling)
1 box angel food cake mix
1 tbsp pumpkin pie spice (or mixture of cinnamon, nutmeg, ginger, and cloves)
1 tbsp vanilla extract
4 oz mix-ins
Instructions
Preheat oven to 350. Mix ingredients together. Pour into greased baking dish and bake according to chart below.

Muffin pan | 15-18 minutes | 24 muffins |
Mini muffin pan | 12-14 minutes | 48 muffins |
