Buffalo Chicken Pasta

Looking for a great last-minute recipe for Super Bowl Sunday?  Don't worry, I've got you covered with this easy and tasty pasta dish inspired by a classic football food - buffalo wings!


Ingredients
1 pound box of pasta, cooked and drained
2 medium chicken breasts, cooked and shredded
1/2 onion, chopped
4 slices bacon
1-1/2 cups blue cheese dressing
1/2 cup buffalo wing sauce
1 cup shredded mozzarella cheese

Instructions
Cook the bacon strips in a skillet over medium heat until they are dark brown and crispy.  Using tongs remove the bacon strips from the pan and place them on a few pieces of paper towel to drain the excess oil.  Cook the onion in the bacon grease until the pieces are soft and translucent.  Crumble the bacon into a large bowl and add the onion, pasta, chicken, blue cheese dressing, and buffalo wing sauce.  Stir until the ingredients are combined and the sauce coats all of the pasta.  Pour mixture into a large glass baking dish.  Cover the pasta with the shredded mozzarella and bake in a 375 degree oven for 20 minutes or until the cheese is melted and beginning to brown.  Serve immediately.


If you're not into spicy foods, try using 2 cups of blue cheese dressing and 1/3 or 1/4 cup of buffalo wing sauce for a more mellow buffalo flavor.  Or if you're worried this might not be spicy enough for you feel free to throw in a few teaspoons of hot sauce - I think my husband did when I wasn't looking!

  2. Awesome, awesome recipe! I actually swapped out the blue cheese for ranch dressing, since I'm not a big fan and it was still phenomenal!

    I also found that the $4.99 rotisserie chickens from Wegmans have meat that's easy to shred and tastes yummy in this dish! :)
