Pumpkin Muffins


Just in time for your Thanksgiving festivities I have for you an amazingly simple and delicious recipe for pumpkin muffins that are also quite versatile.  You can make them plain, with nuts, or with chocolate chips (as pictured above) or whatever else your heart desires (dried cranberries, anyone?)!


Ingredients
1-15oz can pumpkin puree (NOT pumpkin pie filling)
1 box angel food cake mix
1 tbsp pumpkin pie spice (or mixture of cinnamon, nutmeg, ginger, and cloves)
1 tbsp vanilla extract
4 oz mix-ins

Instructions
Preheat oven to 350.  Mix ingredients together.  Pour into greased baking dish and bake according to chart below.

Size of Dish Baking Time Yield
9x13 pan 35-40 minutes   1 cake
Muffin pan 15-18 minutes 24 muffins
Mini muffin pan  12-14 minutes 48 muffins


See - I told you this was a simple recipe!  So simple in fact, that you might want to make a double batch because these puppies are just going to fly off the table.  Happy baking!
