Kiwi Peach Rustic Tart


This summer I have been in the mood for some new and different fruit combinations.  It all started when I had a dessert at my favorite restaurant with strawberries and peaches in it.  I started to wonder what other fruits could be paired with peaches, and this rustic tart with kiwis and peaches in it is my favorite answer so far.


Ingredients:
2 ripe peaches
2 ripe kiwi
1 teaspoon sugar
1/2 oz your fave liqueur (optional - I used peach schnapps)
1 sheet puff pastry dough, thawed and unrolled

Preheat your oven to 350.  Skin and cut up all of the peaches and kiwi and mix them in a bowl with the sugar and liqueur.  Let them sit together and marinade for at least 10 minutes so the fruit can absorb some of the flavor from your liqueur, and so the fruit can release some of its juices.  This will help the tart from becoming soggy in the oven.


Lay your puff pastry out on a cookie sheet and pile up your fruit into the center of the pastry.  Try not to put too much liquid into the pastry.  Any liquid you have leftover you can use later.  Fold the edges of the pastry up and around the fruit.  If you have completely covered your fruit, poke some holes in the top to let the steam escape. 


Bake this in your 350 degree oven for 20-30 minutes until the crust is flaky and brown.  Serves 4, and is especially tasty served right out of the oven with a scoop of vanilla ice cream and some of the leftover liquid drizzled on top.


The fruit in this recipe could easily be doubled and still fit inside the same sheet of puff pastry.  The important part is to make sure you can wrap the dough far enough up the sides (a few inches) so that the juice from the fruit doesn't escape.

  2. This looks so tasty! I wish I had thought about something like this for all the fresh peaches that flooded our Farmer's Market this year -- maybe I'll still be able to find some and try with other fresh fruit. Great post and photos!
